There is a new Hillstone concept in Aspen, The White House Tavern, which I am loving! The first time we went I ordered the kale salad and immediately knew this was a recipe I needed to figure out how to make at home. Our waiter provided me with a list of the majority of the ingredients, so it was pretty simple to piece together the recipe. This is without a doubt the best kale salad I have ever had! I really hope you enjoy it as much as I do!
- 4 tbsps. peanuts
- 2 tbsps. olive oil
- 2 tbsps. sesame oil
- 4 tbsps. lemon juice
- 2 tbsps. rice wine vinegar
- Salt + pepper to taste
- 4 cups Tuscan kale, chopped
- 1 cup green cabbage, finely sliced
- ¼ cup mint, diced
- ¼ cup cilantro, diced
- 4 tbsps. peanuts, chopped
- In a blender, puree peanuts, olive oil, sesame oil, vinegar, lemon juice, salt + pepper until smooth
- Prepare kale, cabbage, mint and cilantro
- Toss well with ½ the dressing, add more dressing if needed, making sure salad is very well coated (you will probably have extra dressing). Add peanuts and toss once more

I am in love…with another…athletic wear line! I can’t believe I am saying this, but I cheated on Lululemon this past weekend. Those of you who know me well, know that I have a small obsession (OK maybe addiction) to Lululemon. Because my husband may read this blog post and FREAK out, I won’t admit to how many Lulu tops, bottoms, jackets, headbands, etc. I have, but honestly it is bad. I never in a million years thought I would have eyes for any athletic wear besides my beloved Lulu…….but then, over the weekend I met Karma.
I first laid eyes on the Karma line at the Pure Barre studio in Aspen (side note, LOVED Pure Barre) and instantly fell head over heels for the line. The sports bras are so beautiful with their intricate backs and use of mixed fabrics and the flowy loose fitting tops are just so light, breezy and romantic looking.
I would have bought the entire Karma line at the Pure Barre studio, but thankfully, for my wallet, I rode my bike 10 miles to the class and could only buy what could fit in my backpack for the ride home. Check out the line and let me know what you think!
