For the Spring Rolls
- 2 ounces rice vermicelli noodles
- 1 tablespoon sesame oil
- 6 pieces mini romaine or small pieces of butter lettuce
- 1 cup red cabbage, finely shredded
- 1 cup Napa cabbage, finely shredded
- 1 cup carrots, shredded
- 1 cucumber, julienned or thinly sliced
- ¼ cup green onion, thinly sliced
- ¼ cup mint, chopped
- ¼ cup cilantro, chopped
- 6 sheets large rice paper
For the Spicy Peanut Dipping Sauce
- 1/3 cup creamy peanut butter
- 3 tablespoons coconut aminos
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 3 garlic cloves, minced
- ¼ cup water, as needed for consistency
- Sriracha to taste
