Veggie Packed Couscous Salad (inspired by Hillstone)

Ingredients
- 1 cup uncooked pearled couscous
- 1 cup cucumber, diced
- 1 cup red bell pepper, diced
- 1/2 cup radishes, thinly sliced
- 1/4 cup parsley, finely chopped
- 1/4 cup mint, finely chopped
- Olive oil and lemon juice to taste
- Salt and pepper to taste
Instructions
- In a large bowl combine all the diced vegetables and herbs and set aside
- Cook the couscous according to the instructions on the package
- As soon as couscous is fully cooked stir in 2 tablespoons of the olive oil
- Transfer couscous to bowl with the vegetables / herbs and stir to combine
- Add more olive oil ( about 2 more tablespoons), lemon juice and salt and pepper to taste
- Serve at room temperature
