Veggie Packed Couscous Salad (inspired by Hillstone)

  • 1 cup uncooked pearled couscous
  • 1 cup cucumber, diced
  • 1 cup red bell pepper, diced
  • 1/2  cup radishes, thinly sliced
  • 1/4 cup parsley, finely chopped
  • 1/4 cup mint, finely chopped
  • Olive oil and lemon juice to taste
  • Salt and pepper to taste


  1. In a large bowl combine all the diced vegetables and herbs and set aside
  2. Cook the couscous according to the instructions on the package
  3. As soon as couscous is fully cooked stir in 2 tablespoons of the olive oil
  4. Transfer couscous to bowl with the vegetables / herbs and stir to combine
  5. Add more olive oil ( about 2 more tablespoons), lemon juice and salt and pepper to taste
  6. Serve at room temperature
