I remember when I was young and my parents would go out on a Friday night and leave us kids to eat delivery pizza. Me + my siblings would have a contest to see who could eat the most pieces…I am pretty sure I ALWAYS won! I LOVE pizza, I mean does anyone not? That said, at age 30, I can no longer stuff my face with pizza without any consequences…. so sad. BUT, here is the solution… Cauliflower Pizza! It is pretty much a carb free pizza made with goat cheese + your favorite toppings.
I have been making cauliflower rice for a while, but I was a little hesitant to try cauliflower pizza (just not sure how the flavors would meld together). The end product proved DELICIOUS though; this is definitely my new pizza alternative.
Ingredients
For the Crust
- 4 cups cauliflower rice (see here for directions)
 - 2 eggs
 - ½ cup goat cheese
 - 1 tsp. garlic powder
 - 1 tsp. oregano
 - 1 tsp. salt
 - 1 tsp. pepper
 
Toppings
- ½ cup marinara sauce
 - ½ cup shredded mozzarella goat cheese
 - Any additional toppings of your choice
 
Directions
- Preheat oven to 400 degrees
 - Make 4 cups of cauliflower rice (about 1 head of cauliflower)
 - Heat cauliflower rice in the microwave for 8 minutes
 - Mix eggs and ½ cup goat cheese into cauliflower rice to make “dough”
 - Season with salt, pepper, garlic powder and oregano
 - Spread “dough” onto a baking sheet (lined with parchment paper). You can shape the dough into any shape you like; spread dough evenly to 3/4 inch thick
 - Bake dough for 25 minutes
 - Add toppings
 - Return to oven for 5 – 10 minutes (until cheese melts)
