Arugula Salad with Blackened Mahi Mahi

Ingredients

For the fish

  • 1 – 4 ounce fillet of mahi mahi (or similar fish)
  • 2 tablespoons olive oil (divided)
  • Blackening seasoning

For the blackening seasoning

  • 2 tablespoons smoked paprika
  • 1 tablespoon paprika
  • 1 tablespoon onion powder
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper

For the Dijon apple cider vinegar dressing

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon honey
  • 1 shallot, minced
  • Salt + pepper to taste

For the salad

  • 3 cups arugula
  • ½ cup shredded carrots
  • ½ cup shredded radishes
  • ¼ cup chopped walnuts

Instructions

For the blackening seasoning

  • Place all ingredients in a mason jar and shake well

For the dressing

  • Place all ingredients in a mason jar and shake well

For the fish

  • Rub fillet with olive oil and seasoning
  • Heat about 1 tablespoon of olive oil in a skillet
  • Cook fish for 3 minutes on each side
