Arugula Salad with Blackened Mahi Mahi

Ingredients
For the fish
- 1 – 4 ounce fillet of mahi mahi (or similar fish)
- 2 tablespoons olive oil (divided)
- Blackening seasoning
For the blackening seasoning
- 2 tablespoons smoked paprika
- 1 tablespoon paprika
- 1 tablespoon onion powder
- 1 teaspoon Cayenne pepper
- 1 teaspoon oregano
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
For the Dijon apple cider vinegar dressing
- ¼ cup olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 teaspoon honey
- 1 shallot, minced
- Salt + pepper to taste
For the salad
- 3 cups arugula
- ½ cup shredded carrots
- ½ cup shredded radishes
- ¼ cup chopped walnuts
Instructions
For the blackening seasoning
- Place all ingredients in a mason jar and shake well
For the dressing
- Place all ingredients in a mason jar and shake well
For the fish
- Rub fillet with olive oil and seasoning
- Heat about 1 tablespoon of olive oil in a skillet
- Cook fish for 3 minutes on each side
