Asian Chicken Salad with a Peanut Lime Vinaigrette

Temperatures are rising and there is nothing better than a delicious crisp salad on a hot summer day! This Asian chicken salad is full of so many fresh and bright flavors and it takes only about 5 minutes to whip up – it is one of my go to salads for a quick, but super delicious lunch or dinner.

Asian Chicken Salad with a Peanut Lime Vinaigrette

Ingredients

For the dressing

  • 2 tablespoons coconut aminos
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon creamy almond or peanut butter
  • Juice of 2 limes
  • 2 garlic cloves, minced
  • Salt + pepper

For the salad

  • 6 cups chopped romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 1 cup shredded carrots
  • ¼ cup thinly sliced green onion
  • ¼ cup almond slivers
  • 1 – 6 ounce rotisserie chicken breast, shredded

Note:  you can buy pre-shredded cabbage at almost any grocery store, just look for the coleslaw mixes.  Also, both Tom Thumb and Central Market sell pre-shredded carrots and cooked rotisserie chickens. 

Instructions

For the dressing

  • Place all ingredients in a blender and blend until smooth

For the salad

  • Divide all ingredients between 2 large bowls and toss with dressing
