The other night I asked Clay (my husband) what he wanted with his crab cakes, I was thinking something along the lines of green beans, but he answered “potatoes au gratin.” As I contemplated how on earth I could make this cheesy, creamy, starchy side dish remotely healthy, I remembered my sister mentioning that her mother in law had a simple and healthier recipe for this dish. When I called my sister for the recipe I was thrilled to discover that this version of potatoes au gratin only contained five ingredients; potatoes, Parmesan cheese, butter, salt and pepper. Clay could not fathom that I would attempt to make this dish without any sort of cream, but I think he was pleasantly surprised with the finished product!
Ingredients
- 1 Idaho or Yukon Gold potato (baking potato)
- 1/2-cup Parmesan cheese
- 1-tablespoon butter
- Salt + pepper to taste
Directions
- Preheat oven to 350 degrees
- Cut potato into even slices (1/8 – 1/16 inch thick)
- Prep a small cast iron skillet or baking dish
- Create one layer of potatoes
- Layer Parmesan cheese and a small slice of butter over potatoes
- Sprinkle salt + pepper
- Repeat and create a 2nd layer of potatoes, Parmesan cheese, butter, salt + pepper
- Cover with foil and bake for 45 minutes, uncover and bake for 15 additional minutes (or until the potatoes are tender)
