collard green veggie wraps

These little wraps pack a TON in a little package!  They are a super food on steroids; jammed packed with vitamins, minerals and healthy fats, but super low in calories and carbs.  Oh, and did I mention they are DELICIOUS??

These are one of my go-to lunches (especially when I am doing my Real Food Cleanse). They are simple + fun to make, so try making them with your kiddos or you an make ahead for yourself and pack for lunch!

Ingredients

  • 2 large collard green leaves
  • 1 cup carrots, julienned
  • 1 cup red bell pepper, julienned
  • 1 cup mung bean sprouts
  • 1 cup cucumber, julienned
  • 1 cup red cabbage, shredded

For simple guacamole

  • 1 ripe avocado, mashed
  • Juice of one lime
  • ½ cup red onion, diced
  • ½ cup tomato, diced
  • 2 tbsps. cilantro, diced
  • Salt + pepper to taste

Directions

  • Cut the collard greens from their stem, so you have 4 halves
  • Smear guacamole on each collard green half
  • Pile a little of each veggie on one side of the collard green and roll up

    I love lettuce wraps but have not tried making them with collard greens. I am always looking for the perfect green to use for the wrap. Some greens are too thin and break too easily, some are too small, some are the wrong shape, etc. I am excited to use the collard greens!
