Oat +Almond Butter Energy Bites

  • 1 cup almond butter
  • 1/3 cup honey
  • 2 tablespoons coconut oil
  • 2 cups rolled oats
  • 2 tablespoons flaxseed meal
  • ¼ cup coconut flakes
  • ¼ cup dark chocolate chips


  • Place almond butter, honey and coconut oil in a large microwave safe bowl. Microwave for about 45 seconds, stir well to combine
  • Fold in oats, flaxseed meal, coconut flakes and chocolate chips
  • Form into 12 round balls
  • Line a baking sheet or glass dish with parchment paper, let energy bites sit in fridge for at least 1 hour before eating
  • Store in fridge
