Recipe – cranberry lemon tuna salad

My lovely little sister stopped by for lunch yesterday, so I whipped up one of my favorite tuna salad recipes.  I first got the idea for this recipe after having cranberry chicken salad from Celebrity Café, I figured it would be easy to recreate a similar salad using tuna.  The apples and cranberries in this recipe add a little bit of sweetness that makes this tuna salad so incredibly yummy.

Ingredients

  • 12 oz. albacore (white meat) tuna
  • ¼ cup red onion, diced
  • ½ small apple, chopped
  • ¼ cup dried cranberries
  • 1 lemon
  • 2 tablespoons non-fat Greek yogurt

Directions

  • Drain tuna well and break into small chunks
  • Add in onion, apple, and cranberries
  • Add Greek yogurt
  • Squeeze in the juice from one lemon
  • Add salt and pepper to taste
  • Mix well

Makes 4 servings
