Recipe – Fresh lemon salad dressing

I love having salad with dinner each night, but always struggled to find a dressing that I liked that was not too high in calories.  I created this simple lemon salad dressing as a base dressing for which I planned to add some other seasonings, but fell in love with the simplicity and freshness of this dressing.  I think this salad dressing pairs nicely over a bed of fresh arugula!

The key to making any salad dressing is using very good olive oil.  I really like Marques de Valdueza extra virgin olive oil.

Ingredients

  • ½ lemon
  • 1 tablespoon GOOD olive oil
  • Salt to taste
  • Pepper to taste

Directions

  • Whisk all ingredients together.  Mix well into salad.  Easy as that!

    This is a go-to dressing for us too! I also like a simple balsamic and fresh lemon dressing.
