I am not a huge dessert person, but I absolutely LOVE cheesecake, always have, always will!! When I was little my mom and I would visit NYC and we would always go to the Plaza hotel to share a slice of cheesecake after seeing a show…happy happy memories. A typical slice of cheesecake can pack some 400 – 700 calories (one slice of strawberry cheesecake from The Cheesecake Factory has 733 calories) so I knew if I wanted to continue enjoying this sweet dessert I would need to create a low calorie version.
These mini cheesecakes are not only super low cal, but insanely easy to make and unbelievable delicious. I mean cheesecake that you can make in 5 minutes and has only 60 calories a serving…. what is better!!
Ingredients
- 12 strawberries, sliced
- 12 graham cracker halves
- ½ cup ricotta cheese
- 1 tablespoon honey
- 1 teaspoon vanilla extract
Directions
- Mix ricotta cheese, honey and vanilla together.
- Top each graham cracker half with ricotta cheese mixture and sliced strawberries
