I grabbed dinner with a friend at Dive, one of my current favorite restaurants, earlier this week. We shared the Arugula salad and it was to die for! Seriously, less than 24 hours later I was craving the salad again…..lucky for me this delicious salad only contained 3 ingredients, so it was a synch to recreate!!
This is the perfect salad…..how amazing would it be for a girl’s luncheon or shower….maybe even served inside a carved out watermelon………….
Ingredients
- 2 cups baby arugula
- ½ cup watermelon, diced
- 2 tablespoons crumbled feta
Serving size – one
Try with my fresh lemon dressing…adds just 60 calories!
